Review for the restaurant: We arrived early and thought we would see if they could fit us in - the team were incredibly accommodating and did their best to get us onto a table quite a bit before our booked time. We were served by Emma (I think that was her name) who was absolutely superb and very professional. Food was excellent and just the right amount.It also looked amazing as you can see by the photo. Wine was also exceptional. Great spot with lovely views out on the water. Will come back if I'm back in Launceston again!

This is a review of the restaurant only. We didn’t stay at the hotel. The restaurant is truly exceptional and very special, because it is following its own path. It is distinctly high-end and fine dining, but there is no pretense for “fine dining”. They are serving a 2 course or 3 course menu and you can choose some additional options. That’s it - plain and simple. The food is highly sophisticated, on par with the best of the best, and yet extremely approachable and understandable. To put it simply - it is really, really tasty. High-level perfection of the craft of cooking is just part of the equation; it is just there and it’s nobody’s intention rubing it into the faces of guests. Which is exactly why this place is working out so extremely well and why it is really unique. Top it off with a uniquely friendly and professional service (quite normal in Tasmania, but even for Tasmania, these ladies were exceptional), add a uniquely beautiful, historic location…and one of the best wine lists in Tasmania. What else could anyone possibly wish for? :)

My husband and I had the pleasure of staying at Stillwater-7 for 5 fabulous nights. The rooms are beautiful and very well appointed down to personalized touchs which made us feel very special. Every staff member was friendly, professional and nothing was to much to ask for. A special thanks to Alex who was brilliant. The restaurant was faultless, the food exceptional, the wine lists perfect and the service impeccable. We will definitely stay again, by far the best hotel and restaurant in Launceston.

We cannot comment on rooms only the restaurant. Our first ever visit. We were celebrating our 20th wedding anniversary. We loved our evening. Your staff were charming, friendly and attentive with our being intrusive. The food was incredible - we loved everything and your house made bread was something we would go out of our way to buy. We will definitely recommend to friends and we understand why our host recommended you to us as her favourite place to celebrate in Launceston. Thank you for a beautiful evening.

We had the most wonderful weekend at Stillwater Seven in Launceston — a true boutique gem that delivers on every front. From the moment we arrived, the staff were warm, attentive, and genuinely welcoming, making us feel right at home while maintaining a professional, polished touch. Our suite was lovely– a perfect blend of heritage charm and contemporary luxury, with thoughtful details everywhere. The views over the Tamar River were peaceful and relaxing, and the locally sourced treats in the in-room pantry were a lovely surprise. It’s clear the team puts great care into every guest experience. The highlight of our stay was dinner at Stillwater Restaurant downstairs. The food was exceptional – beautifully presented, full of flavour, and showcasing the best of Tasmanian produce. Every course felt carefully crafted, and the wine list was spot on. The food was so good we even had dessert! We left feeling completely refreshed and well looked after. Stillwater Seven is the kind of place that makes you fall in love with boutique travel all over again — intimate, elegant, and full of heart. We can’t wait to come back for another weekend soon.
